Spray drying technology
Spray-dried coffee is a high-temperature extraction process, through the hot gas jets to spray concentrated coffee extract, so that the water in the coffee extract quickly evaporates, leaving dry coffee particles. Process flow: coffee beans – roasting – grinding – extraction – concentration evaporation – spray drying – finished products
Traditional instant coffee is made by spray drying technology after a high-temperature extraction process in which the coffee extract is concentrated by spraying it through a hot gas jet, causing the water in the coffee extract to evaporate rapidly, leaving behind dry coffee granules. The main process is as follows: coffee beans – roasted – ground – extracted – concentrated evaporated – spray dried – finished coffee. This high-temperature extraction process allows for rapid production in large quantities, with high production efficiency and relatively low costs. However, coffee produced by high temperature spray drying technology, coffee internal aromatic substances will be destroyed by high temperature, the flavor of coffee will be greatly reduced, and the nutrients in coffee will also be lost and changed.

In recent years, with the improvement of people’s living standards, people are paying more and more attention to the quality of coffee, so freeze-dried coffee is exceptionally hot in the market; coffee freeze-drying technology is a freeze-drying process developed based on the shortcomings of spray-dried coffee technology, which is an extraction method using the principle of sublimation. Freeze-dried coffee refers to the liquid coffee placed inside the freeze-drying machine equipment at tens of degrees below zero, after pre-freezing quickly frozen into ice, in the vacuum state for heat sublimation drying and made of dry freeze-dried coffee, and the traditional spray drying technology, compared to the coffee produced by vacuum freeze-drying equipment has the following advantages:
1. the coffee is dried at low temperatures without denaturation of its internal proteins, making microbial substances inactive;
2. In addition, the coffee produced by the food vacuum freeze dryer, due to the use of low temperature drying technology, makes the loss of volatile components, heat-denatured nutrients and aromatic components in the coffee is minimal, so the original flavour of the coffee is preserved to a great extent
3. In the process of drying coffee in a low temperature vacuum environment, the growth of microorganisms and enzymes are almost impossible to carry out, so that the original properties of the material can be best maintained, and after drying, the shape of the coffee remains basically unchanged and rehydrated.
4. Freeze-dried coffee can be stored at room temperature for more than 5 years without the addition of preservatives.
